Ingredients
- 1kg cherry or other small ripe tomatoes
- ½ tsp flaky salt
- ½ tsp fine sugar
- 1T olive oil
- optional – your choice of herb., my preference is some fresh thyme.
Semi Dried Tomatoes
Method
- Make a slash halfway down the length of each tomato
- Toss gently with the other ingredients
- Lay tomatoes on a lined baking sheet or shallow tray, and leave for 8-12 hours or overnight in a very low oven, (80°C) ideally with the door ajar
- Transfer to a sterile jar, top with oil and seal
- Store for up to 3 months in a cool dark place

They make an awesome topping on pizza, tossed through a roast veg salad, or pasta, or alongside eggs any which way.
