  • 4 x Eggs for poaching
  • Broccoli Ingredients:
  • 1 large head broccoli
  • 2 tsp smoked paprika
  • ½ tsp chilli powder (less if you don’t want it too spicy)
  • 2 cloves garlic
  • Olive oil
  • Salt and Pepper
  • Rice:
  • 1 cup brown rice
  • 1 tin black beans, drained and rinsed
  • Generous handful of coriander roughly chopped
  • 1 lemon

Spicy Roasted Broccoli, Brown Rice & Black Beans with Poached Eggs

Method

  • Preheat the oven to 200 degrees
  • Chop the broccoli in to florets and mix with the smoked paprika, chilli powder, garlic, a drizzle of olive oil and a sprinkle of salt and pepper
  • Spread the broccoli out in a single layer on a piece of parchment paper on a flat roasting tray and roast for approx
  • 10-15 minutes, until starting to crisp a little
  • Cook the brown rice and while still warm toss through the drained/rinsed black beans, lemon juice and roughly chopped coriander
  • Bring a pot of water up to the boil with a splash of white vinegar and then add the eggs, reduce the heat to simmer and cook the eggs for approx
  • 2 minutes
  • Serve the rice and beans with the broccoli and a poached egg
