Ingredients
- 4 x Eggs for poaching
- Broccoli Ingredients:
- 1 large head broccoli
- 2 tsp smoked paprika
- ½ tsp chilli powder (less if you don’t want it too spicy)
- 2 cloves garlic
- Olive oil
- Salt and Pepper
- Rice:
- 1 cup brown rice
- 1 tin black beans, drained and rinsed
- Generous handful of coriander roughly chopped
- 1 lemon
Spicy Roasted Broccoli, Brown Rice & Black Beans with Poached Eggs
Method
- Preheat the oven to 200 degrees
- Chop the broccoli in to florets and mix with the smoked paprika, chilli powder, garlic, a drizzle of olive oil and a sprinkle of salt and pepper
- Spread the broccoli out in a single layer on a piece of parchment paper on a flat roasting tray and roast for approx
- 10-15 minutes, until starting to crisp a little
- Cook the brown rice and while still warm toss through the drained/rinsed black beans, lemon juice and roughly chopped coriander
- Bring a pot of water up to the boil with a splash of white vinegar and then add the eggs, reduce the heat to simmer and cook the eggs for approx
- 2 minutes
- Serve the rice and beans with the broccoli and a poached egg
