Ingredients
- 400 - 500gms Yams (cut into match sticks)
- 2 Tablespoons coconut oil
- 3 cloves of garlic (crushed)
- 1 teaspoon each salt and pepper
- ½ teaspoon cayenne pepper
- 2 teaspoons paprika
- 1 bag spinach (finely sliced)
- Zest of 1 orange or lemon
- ½ cup coriander

Stir-Fried Yams with Spinach

Method
- Heat the coconut oil in a fry pan on a medium heat, and add the yams, garlic, salt and pepper. Cook until tender.
- Add the cayenne pepper, paprika and spinach and turn off the heat, allowing the residual heat to wilt the spinach.
- Add in half of the zest and sliced coriander and stir to combine.
- Top with remaining coriander and zest to serve.
