Ingredients

  • 400 - 500gms Yams (cut into match sticks)
  • 2 Tablespoons coconut oil
  • 3 cloves of garlic (crushed)
  • 1 teaspoon each salt and pepper
  • ½ teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 bag spinach (finely sliced)
  • Zest of 1 orange or lemon
  • ½ cup coriander

Stir-Fried Yams with Spinach

Method

  • Heat the coconut oil in a fry pan on a medium heat, and add the yams, garlic, salt and pepper. Cook until tender.
  • Add the cayenne pepper, paprika and spinach and turn off the heat, allowing the residual heat to wilt the spinach.
  • Add in half of the zest and sliced coriander and stir to combine.
  • Top with remaining coriander and zest to serve.
