Ingredients
- 400 - 500gms Yams (Oamaru Organics, Ettrick Gardens)
- 2 Tablespoons coconut oil
- 3 cloves of garlic - crushed (Ettrick Gardens)
- 1 teaspoon each salt and pepper
- ½ teaspoon cayenne pepper
- 2 teaspoons paprika
- 1 bag spinach (Ettrick Gardens, Janefield Paeonies and Hydroponics)
- Zest of 1 orange or lemon
- ½ cup coriander (Janefield Paeonies and Hydroponics)
Stir-fried Yams with Spinach
Method
- Cut the yams into matchsticks Finely slice the spinach Heat the coconut oil in a fry pan on a medium heat and add the yams, garlic, salt and pepper
- Cook until tender
- Add the cayenne pepper, paprika and spinach and turn off the heat, allowing the residual heat to wilt the spinach
- Add in half of the zest and sliced coriander and stir to combine
- Top with remaining coriander and zest to serve
