Ingredients

  • 400 - 500gms Yams (Oamaru Organics, Ettrick Gardens)
  • 2 Tablespoons coconut oil
  • 3 cloves of garlic - crushed (Ettrick Gardens)
  • 1 teaspoon each salt and pepper
  • ½ teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 bag spinach (Ettrick Gardens, Janefield Paeonies and Hydroponics)
  • Zest of 1 orange or lemon
  • ½ cup coriander (Janefield Paeonies and Hydroponics)

Stir-fried Yams with Spinach

Method

  • Cut the yams into matchsticks Finely slice the spinach Heat the coconut oil in a fry pan on a medium heat and add the yams, garlic, salt and pepper
  • Cook until tender
  • Add the cayenne pepper, paprika and spinach and turn off the heat, allowing the residual heat to wilt the spinach
  • Add in half of the zest and sliced coriander and stir to combine
  • Top with remaining coriander and zest to serve
  • Enjoy!
