Ingredients
- 250 g Tayberries (Ettrick Gardens)
- ½ red oak lettuce (Oamaru Organics)
- 1 jar spiced Shinglish Syrian Cheese (Abdal Gourmet Catering)
- ½ red onion finely diced (Oamaru Organics)
- ¼ cup finely sliced mint leaves
- ¼ cup toasted sunflower seeds
- ¼ cup red wine vinegar
Tayberry, Red Oak and Shinglish Cheese Salad
Method
- Remove the red oak leaves from the base and rip into desired sized pieces
- Arrange on serving plate
- Remove the shinglish cheese from the oil and cut into chunks, I attempt to cut them into quarters but they do break into natural formed chunks as you go
- Arrange these on top of the lettuce along with the tayberries
- Sprinkle with finely diced red onion, toasted sunflower seeds and sliced mint leaves
- In a small bowl combine the red wine vinegar with ¼ of a cup of the oil from the cheese, and use this to dress the salad
- Enjoy!
