Ingredients

  • 700gms potatoes
  • 2 Tablespoons olive oil
  • 3 cloves garlic chopped
  • 1 red chilli finely chopped or 2 teaspoons chilli flakes
  • 2 tsps cumin seeds
  • 2 teaspoons coriander seeds
  • 1 Tablespoon of ground turmeric
  • Juice of 2 squeezed lemons
  • Salt and pepper to taste
  • Bunch of finely chopped fresh coriander

Turmeric Potatoes with Lemon, Chillies and Coriander

Method

  • Chop potatoes into bite size chunks (I don't bother to peel them) then boil or steam until tender
  • Then drain and mix with the rest of the ingredients
  • Heat olive oil in a heavy based pan and stir in chopped garlic, cumin seeds, red chilli for 2 minutes
  • Stir in the potatoes coating them in the spices
  • Add the turmeric and lemon juice and cook for another 2 minutes so the potatoes absorb the colour and flavour
  • Season with salt and pepper, tip into a serving dish and garnish with the fresh coriander
