Ingredients
- 700gms potatoes
- 2 Tablespoons olive oil
- 3 cloves garlic chopped
- 1 red chilli finely chopped or 2 teaspoons chilli flakes
- 2 tsps cumin seeds
- 2 teaspoons coriander seeds
- 1 Tablespoon of ground turmeric
- Juice of 2 squeezed lemons
- Salt and pepper to taste
- Bunch of finely chopped fresh coriander
Turmeric Potatoes with Lemon, Chillies and Coriander
Method
- Chop potatoes into bite size chunks (I don't bother to peel them) then boil or steam until tender
- Then drain and mix with the rest of the ingredients
- Heat olive oil in a heavy based pan and stir in chopped garlic, cumin seeds, red chilli for 2 minutes
- Stir in the potatoes coating them in the spices
- Add the turmeric and lemon juice and cook for another 2 minutes so the potatoes absorb the colour and flavour
- Season with salt and pepper, tip into a serving dish and garnish with the fresh coriander
