Ingredients
- 4-6 washed, peeled Agria potatoes, cut into chunks (Oamaru Organics, Ettrick Gardens)
- Olive oil (Dunford Grove)
- Ground black pepper and flaked salt
- Blue cheese, crumbled or cut into small irregular pieces (Evansdale Cheese, Whitestone Cheese)
- 2-3 tablespoons sour cream (optional)
- Handful of fresh herbs such as Italian parsley, thyme, rosemary

Warm roast potato smash with blue cheese and herbs
Method
- Heat oven to 200°c
- Toss the prepared potatoes in olive oil, season generously and place in a roasting dish
- Roast until tender and golden
- Turn the cooked potatoes into a bowl, roughly mash with a fork stir through the sour cream
- Pile onto a platter and top with the crumbled or cut blue cheese and finish with some roughly chopped fresh herbs
