Ingredients
- 1 bunch snow ball turnips
- 4 eggs
- 80g watercress
- Handful of fresh flat leaf parsley
- Dressing ingredients:
- 25ml white wine vinegar
- 100ml light olive oil
- 1 tsp Dijon mustard
- ½ tsp tarragon (dried is fine)
- 1 tbsp fresh chopped chives
- Salt & Pepper
Watercress and snowball turnip salad
Method
- To make the dressing mix together the white wine vinegar and mustard, drizzle in the olive oil and then add the tarragon and chives
- Season to taste with salt and pepper and set aside while preparing the rest of the salad Hard boil the eggs (approx
- 10minutes boiling time if started in cold water)
- Run under cold water once cooked and when cold peel and cut into segments Wash and finely slice the turnips (using a mandolin will give you a nice thin slice) Roughly chop the parsley
- Pick the watercress, wash and gently dry on paper towels Mix together the sliced turnips, watercress, parsley and eggs
- Drizzle over dressing
- Check seasoning of salad and add salt and pepper to taste
