  • 4 large eggs (yolks) (Agreeable Nature Free Range Eggs)
  • 4 Tbsp manuka honey (Blueskin Bay Honey)
  • 4 Tbsp whisky
  • 300ml cream (Holy Cow)

Whisky & Manuka Honey Ice Cream

Method

  • Beat egg yolks in a mixer
  • Warm manuka honey gently till melted, then add to egg yolks
  • Best together for 8-10min until very thick
  • Add whisky in the last 2 minutes, continue to beat until thick and fluffy (not too stiff)
  • Fold mixture into whipped cream
  • Blend together
  • Put into a container with lid and freeze overnight
