- ½ pumpkin
- 3 parsnips
- 1 bunch carrots
- 4 potatoes
- 3 leeks
- 3 pears (mixed types)
- ½ cup maple syrup
- 8 sage leaves
- Olive oil
- Whitestone Cheese Kyeburn smoked cheddar
- Tartan Sari Spicy Chili Pickles and Spicy Feijoa Chutney
- Roasted cumin, celery, and mustard seeds

WINTER MAPLE VEGETABLE PLATTER
Method
Vegetable Preparation:
- Preheat the oven to 210°C.
- Cut the pumpkin, parsnips, carrots, leeks, and potatoes. Place them in a roasting dish.
- Mix ¼ cup maple syrup with olive oil and pour over the vegetables.
- Roast for 15-20 minutes, adding sage leaves at the 15-minute mark and tossing through the dish.
Pear Preparation:
- Cut pears into quarters with skins on.
- Place in an oven dish, pour over the remaining maple syrup, and roast for 8-10 minutes until just softened.
Assembly:
- Arrange roasted vegetables on a large platter.
- Sprinkle cheddar over the vegetables.
- Add teaspoons of pickles and chutney around the plate.
- Sprinkle with toasted seeds.
