Ingredients
- 1 cup quinoa (cooked to packet instructions – recommend adding a stock cube to the water when cooking)
- 1 Tbsp olive oil
- 1 diced onion
- 2 cups diced veges (carrot, celery, capsicum, courgette, mushrooms, broccoli – or seasonal)
- 2 heaped tsp zesty ginger & lime seasoning mix
Zesty Ginger Fried Quinoa
Method
- Add oil to med heat pan, add all diced vegetables and toss to start cooking
- Add in quinoa & seasoning and mix together
- Turn heat down to low and cook covered for 5-10 mins to let seasoning heat through
