Ingredients

  • 1 cup quinoa (cooked to packet instructions – recommend adding a stock cube to the water when cooking)
  • 1 Tbsp olive oil
  • 1 diced onion
  • 2 cups diced veges (carrot, celery, capsicum, courgette, mushrooms, broccoli – or seasonal)
  • 2 heaped tsp zesty ginger & lime seasoning mix

Method

  • Add oil to med heat pan, add all diced vegetables and toss to start cooking
  • Add in quinoa & seasoning and mix together
  • Turn heat down to low and cook covered for 5-10 mins to let seasoning heat through
