Ingredients
- 4 cooking apples
- 1 cup of water
Base
- 1 ⅓ cup GF flour
- 1 tsp baking powder
- ½ cup stevia (or sub for caster sugar)
- 1 cup melted butter
- 1 tsp vanilla
Sour cream topping
- 2 egg yolks
- 250g sour cream
- 1 tsp stevia
- ½ tsp cinnamon
Apple and Sour Cream Slice

Method
Prep apples
- Preheat oven to 175 °C (bake setting).
- Peel, core, and quarter the apples; slice each quarter into about 4 thick pieces.
- Place apple slices into a large pot with water and cook until tender but not falling apart (about 7–10 minutes). Set aside.
Make the base and sour cream topping
- In a mixing bowl, combine GF flour, stevia (or sugar), and baking powder.
- Stir in melted butter and vanilla until evenly combined.
- Press this mixture into a slice tin and bake for 15 minutes.
- While the base is baking, mix together sour cream, egg yolks, additional stevia, and cinnamon in a bowl. Set aside.
Assemble
- Once cooked, top the base of the slice with a single layer of the cooked apples and spread the sour cream mix on top. Bake for a further 20 minutes.
- Dust with cinnamon. Allow to cool before cutting.
