Ingredients

  • 4 cooking apples (Willowbrook Orchard)
  • 1 cup of water
  • 1 and 1/3 cup GF flour
  • 1 teaspoon baking powder
  • ½ cup stevia (or sub for caster sugar)
  • 1 cup melted butter
  • 1 teaspoon vanilla
  • 2 egg yolks (Agreeable Nature)
  • 250g sour cream
  • 1 teaspoon stevia
  • ½ teaspoon cinnamon

Apple and Sour Cream Slice

Method

  • Preheat the oven to 175 degrees celsius on bake
  • Peel the apples, cut into quarters, and remove the core
  • Cut each quarter into about 4 thick slices
  • Add to a large pot with the water
  • Cook until tender but not falling apart, this doesn’t take long, approx
  • 7-10 minutes
  • Set aside
  • In a mixing bowl, add the GF flour, stevia (or sugar), and baking powder
  • Mix in the butter and vanilla and stir until combined
  • Press into a slice tin and cook for 15mins
  • While that cooks, combine the sour cream, egg yolks, stevia, and cinnamon
  • Set aside
  • Once cooked, top the base of the slice with a single layer of the cooked apples and spread the sour cream mix on top
  • Bake for a further 20 minutes
  • Dust with cinnamon
  • Allow to cool before cutting
