Ingredients
- 4 cooking apples (Willowbrook Orchard)
- 1 cup of water
- 1 and 1/3 cup GF flour
- 1 teaspoon baking powder
- ½ cup stevia (or sub for caster sugar)
- 1 cup melted butter
- 1 teaspoon vanilla
- 2 egg yolks (Agreeable Nature)
- 250g sour cream
- 1 teaspoon stevia
- ½ teaspoon cinnamon
Apple and Sour Cream Slice
Method
- Preheat the oven to 175 degrees celsius on bake
- Peel the apples, cut into quarters, and remove the core
- Cut each quarter into about 4 thick slices
- Add to a large pot with the water
- Cook until tender but not falling apart, this doesn’t take long, approx
- 7-10 minutes
- Set aside
- In a mixing bowl, add the GF flour, stevia (or sugar), and baking powder
- Mix in the butter and vanilla and stir until combined
- Press into a slice tin and cook for 15mins
- While that cooks, combine the sour cream, egg yolks, stevia, and cinnamon
- Set aside
- Once cooked, top the base of the slice with a single layer of the cooked apples and spread the sour cream mix on top
- Bake for a further 20 minutes
- Dust with cinnamon
- Allow to cool before cutting
