Ingredients

  • 4 small apples sliced horizontally and cored
  • 2 Tablespoons of maple syrup
  • 2 teaspoons of ground cinnamon
  • 120gm mascapone cheese
  • 1/2 cup of raw walnuts

Method

  • Preheat the oven 180c
  • Line eight holes of a 12 hole muffin tray with baking paper
  • Place an apple in half & place in each lined muffin hole
  • Cut side up
  • Put maple syrup, cinnamon in a small bowl and add 2 Tablespoons of boiling water mix together
  • Spoon evenly over top of each apple
  • Bake for 45 mins or until the apples are tender
  • Leave to slightly cool
  • Top with mascarpone, walnuts and a wee sprinkle of salt
