Ingredients
- 4 small apples sliced horizontally and cored
- 2 Tablespoons of maple syrup
- 2 teaspoons of ground cinnamon
- 120gm mascapone cheese
- 1/2 cup of raw walnuts

Baked Apple topped with Mascarpone & Walnuts
Method
- Preheat the oven 180c
- Line eight holes of a 12 hole muffin tray with baking paper
- Place an apple in half & place in each lined muffin hole
- Cut side up
- Put maple syrup, cinnamon in a small bowl and add 2 Tablespoons of boiling water mix together
- Spoon evenly over top of each apple
- Bake for 45 mins or until the apples are tender
- Leave to slightly cool
- Top with mascarpone, walnuts and a wee sprinkle of salt
