Ingredients
- ¼ cup flour
- ½ cup spelt flour
- 1 tsp baking powder
- 1 TBS ceylone cinnamon
- ½ tsp cardamom
- ¼ tsp all spice
- ½ tsp nutmeg
- 1 tsp ground ginger
- 100gm melted butter
- 2 eggs (Agreeable Nature)
- ½ cup sugar or stevia powder
- 1 tsp vanilla extract
- 3 ice cream pears – peeled, core removed, and cut into approx. 3 cm pieces (Willowbrook Orchard)
Chai Spiced Pear Spelt Cake
Method
- Preheat the oven to 170 degrees celcius, and line a shallow 20cm cake pan
- In a mixing bowl, combine the flours, spices, and baking powder
- In a separate bowl, combine the eggs, sugar or stevia, and vanilla
- Whisk well
- Add half of the egg mix to the dry ingredients, followed by half of the egg
- Stir gently to combine between additions
- Repeat the process with the remaining egg mix, finishing with the butter
- Finally fold through the pear
- There will seem to be very little cake mix and a lot of fruit, that is ok
- Press the mix into the prepared cake tin and smooth the top with the back of a spoon
- Bake in the centre of the oven for 40 minutes, or until a skewer comes out clean
- Cool slightly
- Served warm it is beautiful! It’s able to be eaten cooled as well
