Ingredients
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 225 g chopped semi-sweet chocolate
- 1/2 cup canola oil
- 3 eggs
- 1 cup granulated sugar
- 2 tsp vanilla
- 2 cups peeled and grated raw beetroot

CHOCOLATE BEETROOT BROWNIES
Method
- Whisk flour with cocoa powder and salt in a medium bowl
- Microwave (or in a pot on a low heat element) chocolate in a small bowl until melted, about 1 min
- Stir in canola oil until smooth
- Whisk the eggs, sugar and vanilla in a large bowl
- Whisk in the chocolate mixture, then fold in flour mixture and 2 cups grated beetroot until just combined
- Scrape into a lined brownie baking pan
- Bake at 160° until a skewer inserted into the centre comes out just clean, 45 to 50 min
- Cool on a rack before cutting into squares
