Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 225 g chopped semi-sweet chocolate
  • 1/2 cup canola oil
  • 3 eggs
  • 1 cup granulated sugar
  • 2 tsp vanilla
  • 2 cups peeled and grated raw beetroot

CHOCOLATE BEETROOT BROWNIES

Method

  • Whisk flour with cocoa powder and salt in a medium bowl
  • Microwave (or in a pot on a low heat element) chocolate in a small bowl until melted, about 1 min
  • Stir in canola oil until smooth
  • Whisk the eggs, sugar and vanilla in a large bowl
  • Whisk in the chocolate mixture, then fold in flour mixture and 2 cups grated beetroot until just combined
  • Scrape into a lined brownie baking pan
  • Bake at 160° until a skewer inserted into the centre comes out just clean, 45 to 50 min
  • Cool on a rack before cutting into squares
