Ingredients

  • 6 baking apples
  • ¼ cup apple cider vinegar
  • ¼ cup clover and thyme honey
  • 1 sprig thyme
  • 2 cups plain unsweetened Greek yoghurt (or Holy Cow yoghurt)
  • ¾ cup of walnut pieces

Method

  • Preheat the oven to 180 degrees celsius
  • Cut the apples in half and remove the core with a knife or apple corer
  • Place flesh side down in a baking dish
  • In a bowl, combine the apple cider vinegar, honey, and thyme leaves (removed from the stem)
  • Whisk with a fork until well combined
  • Pour the honey mix over the apples and bake in the oven for 40mins or until soft
  • Turn the apples once during cooking
  • Place the walnuts on a baking tray and bake in the oven for 10 minutes, or until fragrant but not burnt
  • Place some of the yoghurt on our plate
  • Top with the apples, a couple of spoons of the syrup, and the walnuts
  • Garnish with a few leaves of thyme
