Ingredients

  • 2 corn cobs (cooked and kernels sliced off)
  • 1 red onion thinly sliced
  • Large handful of fresh runner beans (steamed for 5 mins until cooked)
  • 2 x 400gm tins of black beans (drained and rinsed in a colander)
  • Juice of a lemon
  • 500gms tomatoes
  • 1 spring onion
  • 1 cucumber
  • Bunch of coriander (chopped)
  • Large slug of olive oil
  • Salt and pepper

Method

  • Place all ingredients into a large salad bowl and leave to sit for 10 mins or so to allow the ingredients to macerate together
