Ingredients
- 2 corn cobs (cooked and kernels sliced off)
- 1 red onion thinly sliced
- Large handful of fresh runner beans (steamed for 5 mins until cooked)
- 2 x 400gm tins of black beans (drained and rinsed in a colander)
- Juice of a lemon
- 500gms tomatoes
- 1 spring onion
- 1 cucumber
- Bunch of coriander (chopped)
- Large slug of olive oil
- Salt and pepper

Method
- Place all ingredients into a large salad bowl and leave to sit for 10 mins or so to allow the ingredients to macerate together
