  • Pizza base of your choice
  • Fresh cherries, stoned and coarsely chopped/ripped apart
  • Olive oil
  • Parmesan cheese (not the dried stuff in a can), grated
  • Kawakawa salami, thinly sliced or cut into small cubes
  • Fresh basil
  • Fresh mozzarella, optional

Easy basil, fresh cherry and kawakawa salami pizza

Method

  • Preheat oven to 220°c
  • If you are lucky enough to have a pizza stone, then place this in now
  • A heavy metal oven tray does the same trick, crisping up the base perfectly
  • Liberally drizzle your pizza base with olive oil and scatter over the parmesan cheese
  • Scatter over the cherries and salami
  • Don’t be too heavy handed with the toppings, sometimes less is more when it comes to creating flavour
  • Dot with ripped basil leaves and the mozzarella, still using the less is more approach
  • Place in the oven
  • Bake until the edges are crispy and golden

You can be adventurous and make your own base or use a flatbread or wrap as a base, just keep it thin so the topping does all the talking.
