Ingredients
- Pizza base of your choice
- Fresh cherries, stoned and coarsely chopped/ripped apart
- Olive oil
- Parmesan cheese (not the dried stuff in a can), grated
- Kawakawa salami, thinly sliced or cut into small cubes
- Fresh basil
- Fresh mozzarella, optional
Easy basil, fresh cherry and kawakawa salami pizza
Method
- Preheat oven to 220°c
- If you are lucky enough to have a pizza stone, then place this in now
- A heavy metal oven tray does the same trick, crisping up the base perfectly
- Liberally drizzle your pizza base with olive oil and scatter over the parmesan cheese
- Scatter over the cherries and salami
- Don’t be too heavy handed with the toppings, sometimes less is more when it comes to creating flavour
- Dot with ripped basil leaves and the mozzarella, still using the less is more approach
- Place in the oven
- Bake until the edges are crispy and golden

You can be adventurous and make your own base or use a flatbread or wrap as a base, just keep it thin so the topping does all the talking.
