Ingredients

  • 200 gm butter
  • ½ cup brown sugar
  • 1 cup castor sugar
  • 2 tsp vanilla extract
  • 1 cup cocoa powder
  • 3 eggs
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2/3 cup flour or gluten free flour
  • 190 gm chocolate
  • 250 gm fresh pitted cherries

FRESH CHERRY BROWNIE

Method

1. Pre heat the oven to 150°C.

2. Prepare a 25 x 25-cm baking tin, line with baking paper.

3. In a large mixing bowl, cream the butter and sugar until light in colour. Add vanilla and then one egg at a time until well combined. Sift the dry ingredients and add to mixer.

4. Remove bowl from mixer and slowly fold in chocolate and fresh cherries.

5. Spread into baking tins and bake for 50 to 60 minutes, until springs back to the touch.

6. Dust with icing sugar and serve with whipped cream or yoghurt.
