  • 350g bread
  • Butter
  • 250g figs
  • 2 tbsp sherry
  • 300ml milk
  • 300ml cream
  • 3 eggs
  • 4 tbsp thyme honey
  • 2 tsp vanilla
  • ½ tsp cinnamon

Method

  • Pre heat the oven to 160 degrees2
  • Slice the bread in to slices about 2cm thick and butter3
  • In a bowl whisk together the eggs, milk, cream, honey, vanilla, sherry and cinnamon4
  • Slice the figs5
  • Arrange the bread in a deep baking dish scattered with the figs6
  • Pour over the egg mix, allow the bread to soak it up and add more until the egg mix is all in the baking dish7
  • Bake in the oven until the custard is set, approx
  • 40 minutes8
  • Serve warm with ice cream
