Ingredients
- 1 bunch of cavolo nero kale – greens removed from the stalk and finely sliced. (Ettrick Gardens)
- 2 Hetlina Apples – cut into 1cm cubes (Otago Organics)
- 4 stalks celery – Finely sliced (Oamaru Organics)
- 1 cup walnuts – cut into pieces
- juice of 1 lemon
- ½ cup olive oil (Dunford Grove)
- 2 Tablespoons Dijon mustard
- 1 teaspoon each of salt and pepper
Kale, Apple, Celery and Walnut Salad (My Take on Waldorf Salad)
Method
- Place prepared kale in a serving bowl
- Place the prepared apple, celery, and walnuts on top of the kale
- Prepare the dressing by combining the remaining ingredients in a small jar and shake well
- Pour the dressing over the salad and serve immediately
- Enjoy!
