Ingredients

  • 450g grated parsnip (approx. 2 parsnips depending on size)
  • ¼ tsp garlic powder
  • 2 eggs
  • Olive oil
  • 2 tbsp chopped parsley
  • ½ cup cheddar cheese
  • ½ cup milk
  • ¼ cup rice flour
  • Salt & Pepper
  • Port Larders tomato kasundi to serve

PARSNIP, PARSLEY AND CHEDDAR WAFFLES WITH TOMATO KASUNDI

Method

Preparation:

  1. Heat a pan over moderate-high heat and add a little olive oil.
  2. Cook the grated parsnip until it is slightly colored and softened.
  3. Add the garlic powder and stir through. Remove from heat and allow to cool.
  4. In a bowl, whisk together the eggs, milk, and chopped parsley.
  5. Grate the cheddar cheese and add it to the bowl along with the rice flour and the cooled parsnip mixture.
  6. Stir everything together and season with salt and pepper.


Make Waffles:

  1. Heat a waffle iron on high heat and cook the waffles according to the iron's instructions.
  2. Serve the hot waffles with a side salad and the tomato kasundi.
