- 1kg Agria Potatoes
- 100g streaky bacon - chopped
- 100g Curd Cheese
- Large bunch of Spinach Leaves – chopped
- 1 med onion - diced
- Dried Seasoning – Paprika, Thyme, Sage
- Salt & Pepper

Method
- Wash and prepare potatoes, pre-cook until just soft (this can be done ahead of time or a great recipe for leftover cooked potatoes)
- Cut into rough cubes and put into a hot pan with approx
- 2Tbsp Oil
- Sprinkle generously with paprika, dried thyme & sage, and salt & pepper
- Toss in pan to full coat potatoes, cook until crispy edges
- Remove potatoes from the pan and reduce heat to medium
- Add bacon pieces and when begin to brown add onion and cook until just translucent
- Add spinach and cooked potatoes and toss/mix together
- Remove from heat
- Spread evenly in the pan and add chunks of the curd cheese around the mix
- Place under the grill until the cheese starts to bubble

Agria Potatoes are definitely a great choice when you want that crispy edge to your potatoes and cooked this way there are plenty of edges. When you chop up the cooked potatoes, don’t worry if you get a few mushy bits, throw them in the pan too, they make extra crispy bits.
