Ingredients
- 1 swede (Caithness Farm)
- 3 TB olive oil (Dunford Grove)
- Salt and pepper
- ½ cup grated parmesan
- 1x 10cm sprig rosemary
- 1 clove garlic – crushed
Swede Fries with Parmesan and Rosemary
Method
- Peel the swede and cut into fries
- Put in a bowl with the oil, salt and pepper, and garlic
- Toss to coat the swede
- Bake in a single layer on the baking sheet for 40 minutes, or until cooked and beginning to brown
- Remove the leaves from the stalk of the rosemary, discard the stalk and roughly chop the leaves
- Remove the swede from the oven and top with the parmesan and rosemary
- Return to the oven for 5-10 minutes, until the cheese is melted, and rosemary fragrant
- Wait a few minutes for the parmesan to firm up a bit before breaking them apart and serving them
