  • 1 swede (Caithness Farm)
  • 3 TB olive oil (Dunford Grove)
  • Salt and pepper
  • ½ cup grated parmesan
  • 1x 10cm sprig rosemary
  • 1 clove garlic – crushed

Swede Fries with Parmesan and Rosemary

Method

  • Peel the swede and cut into fries
  • Put in a bowl with the oil, salt and pepper, and garlic
  • Toss to coat the swede
  • Bake in a single layer on the baking sheet for 40 minutes, or until cooked and beginning to brown
  • Remove the leaves from the stalk of the rosemary, discard the stalk and roughly chop the leaves
  • Remove the swede from the oven and top with the parmesan and rosemary
  • Return to the oven for 5-10 minutes, until the cheese is melted, and rosemary fragrant
  • Wait a few minutes for the parmesan to firm up a bit before breaking them apart and serving them
  • Enjoy!
