Ingredients
- 900g Jerusalem artichokes (Ettrick Gardens)
- 200g parsley root
- 3 tbsp thyme honey (Blueskin Bay Honey)
- 2 cloves garlic (Ettrick Gardens)
- 3 tbsp olive oil (Dunford Grove)
- 1 tbsp fresh thyme
- Salt
- Pepper
Thyme honey roasted artichokes and parsley root
Method
- Pre heat the oven to 200 degrees Scrub the artichokes and the parsley roots to remove all of the dirt, cut into chunks Finely chop the garlic and mix together the olive oil, honey and finely chopped fresh thyme, toss through the chopped veg and then spre
- Season with salt and pepper Roast in the oven for 20-30 minutes until golden and tender
