  • 900g Jerusalem artichokes
  • 200g parsnip
  • 3 Tbsp thyme honey
  • 2 cloves garlic, finely chopped
  • 3 Tbsp olive oil 
  • 1 Tbsp fresh thyme
  • Salt
  • Pepper

Thyme honey roasted artichokes and parsnip

Method

  • Pre heat the oven to 200 degrees.
  • Scrub the artichokes and the parsley roots to remove all of the dirt, cut into chunks.
  • Mix together chopped garlic, olive oil, honey and finely chopped fresh thyme, toss through the chopped veg and then spread on baking pan. Season with salt and pepper.
  • Roast in the oven for 20-30 minutes until golden and tender.
