Ingredients
- 900g Jerusalem artichokes
- 200g parsnip
- 3 Tbsp thyme honey
- 2 cloves garlic, finely chopped
- 3 Tbsp olive oil
- 1 Tbsp fresh thyme
- Salt
- Pepper
Thyme honey roasted artichokes and parsnip

Method
- Pre heat the oven to 200 degrees.
- Scrub the artichokes and the parsley roots to remove all of the dirt, cut into chunks.
- Mix together chopped garlic, olive oil, honey and finely chopped fresh thyme, toss through the chopped veg and then spread on baking pan. Season with salt and pepper.
- Roast in the oven for 20-30 minutes until golden and tender.
