Ingredients
Fritter Ingredients:
- 2 ½ cups broccoli (approx. ½ head)
- 1 cup grated haloumi
- 3 eggs
- 1 Tbsp coconut flour
- Salt
- Pepper
Spread Ingredients:
- 1 ½ Tbsp smoked paprika
- ½ Tbsp ground turmeric
- 1 tsp garlic powder
- ½ tsp cumin
- ¼ tsp nutmeg
- ¼ tsp cloves
- ½ tsp cayenne
- ½ tsp ginger
- Pinch coconut sugar
- Salt
- Pepper
- Olive oil
- 500g cauliflower
- ½ cup natural Greek yoghurt
- 1 clove garlic
- 20g grated parmesan
- Juice 1 lemon

Broccoli & Haloumi Fritters with Spiced Cauliflower Spread

Method
Make Cauliflower Spread:
- Preheat the oven to 200 degrees.
- Mix all of the spices and coconut sugar together in a bowl.
- Cut the cauliflower into florets, place on an oven tray and drizzle over some olive oil.
- Sprinkle on about 3 Tbsp of the spice mix.
- Mix thoroughly and then pop in the oven and roast for 15-20 minutes until tender.
- Allow to cool completely and then blend in a food processor until smooth with an extra tbsp of spice mix, the yoghurt, grated parmesan, garlic and lemon juice.
- Season to taste with salt and pepper.
Make Fritters:
- Finely chop the broccoli (you can do this in a food processor) and then add to a bowl with the grated haloumi, eggs and coconut flour.
- Season with salt and pepper.
- Heat a pan on a moderate heat and add some oil.
- Cook spoonfuls of fritter mix until brown on one side and then turn and repeat on the other side.
- Serve the fritters warm with the cauliflower spread.
