  • Salt & Pepper
  • Honey (Bennies Honey or Blueskin Bay Honey)
  • Blue Cheese Spread Ingredients:
  • 70g Windsor Blue cheese (Whitestone or Evansdale)
  • 40g cream cheese
  • 15g toasted chopped walnuts (Willowbrook Orchard)

Fig and Blue Cheese Bruschetta

Method

  • Preheat the oven on grill
  • Make the blue cheese spread by mixing the Windsor blue, cream cheese and walnuts together
  • Cut 4 slices of the spelt sourdough and then cut in half to create 8 pieces, lightly brush with olive oil on both sides and season lightly with salt and pepper
  • Grill the bread until toasted and golden around the edges, turn over and repeat on the other side
  • Allow the toast to cool slightly before spreading over the blue cheese spread, top with sliced fresh figs and a drizzle of honey if desired
