Ingredients

  • 1 apple, peeled & seeded
  • 6 Tbsp wildflower honey
  • 1 Tbsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 Tbsp baking soda
  • 1 tsp apple cider vinegar
  • ½ tsp vanilla extract
  • 200ml olive oil
  • 110gm walnuts
  • 500gm flour

HEALTHY WALNUT COOKIES

Method

  • Cut the apple into small pieces, add the apple to a pot and cook until soft, add water to cover the apples, simmer for about 15 minutes or until the water evaporates
  • Place apples in a bowl and add the rest of the ingredients except for the flour and walnuts
  • In a food processor blend the walnuts until fine
  • Add the walnuts to the wet mix and then slowly add in the flour
  • It will feel soft and oily in the hand
  • Cover the dough and refrigerate for 1 hour
  • Roll out the dough then Using a cookie cutter, cut out the dough and place on lined baking trays, bake for 8-10 minutes or until the cookies are crisp
