Ingredients
- 1 apple, peeled & seeded
- 6 Tbsp wildflower honey
- 1 Tbsp ground cinnamon
- ¼ tsp ground cloves
- 1 Tbsp baking soda
- 1 tsp apple cider vinegar
- ½ tsp vanilla extract
- 200ml olive oil
- 110gm walnuts
- 500gm flour
HEALTHY WALNUT COOKIES
Method
- Cut the apple into small pieces, add the apple to a pot and cook until soft, add water to cover the apples, simmer for about 15 minutes or until the water evaporates
- Place apples in a bowl and add the rest of the ingredients except for the flour and walnuts
- In a food processor blend the walnuts until fine
- Add the walnuts to the wet mix and then slowly add in the flour
- It will feel soft and oily in the hand
- Cover the dough and refrigerate for 1 hour
- Roll out the dough then Using a cookie cutter, cut out the dough and place on lined baking trays, bake for 8-10 minutes or until the cookies are crisp
