Ingredients

  • Olive oil
  • ½ red onion 
  • 1 carrot 
  • 1 bag of stir fry greens of choice ((cabbage / broccoli / bokchoi / etc)
  • 150g rice noodles
  • Juice of 1 lime
  • 1 tbsp toasted sesame seeds to garnish

Sauce ingredients:

  • 1/3 cup peanut butter 
  • ½ cup water
  • 2 tbsp tamari
  • 1 ½ tbsp fish sauce
  • 1 tbsp fresh ginger finely grated
  • 2 tsp cornflour
  • 2 tsp coconut sugar
  • 1 red chilli finely chopped
  • 2 cloves garlic finely chopped

STIR FRY VEGETABLES WITH PEANUT SAUCE AND RICE NOODLES

Method

Prepare the Ingredients:

  • Mix the sauce ingredients together and set aside.
  • Peel and julienne the carrot.
  • Finely slice the red onion.
  • Roughly chop the stir-fry greens.

 

Cook the Noodles:

  • Cook the rice noodles in boiling water according to the instructions on the packet. Drain and set aside.

 

Stir-Fry:

  • Heat a pan on high heat and add a drizzle of olive oil.
  • Add the carrot and onion, cooking for a couple of minutes.
  • Add the stir-fry greens and cook for another minute.
  • Add the peanut sauce and cooked noodles to the pan.
  • Stir everything together until well combined.
  • Squeeze over the lime juice and check the seasoning. Add a pinch of salt if needed.
  • Sprinkle with toasted sesame seeds and serve immediately.
