Ingredients
- Olive oil
- ½ red onion
- 1 carrot
- 1 bag of stir fry greens of choice ((cabbage / broccoli / bokchoi / etc)
- 150g rice noodles
- Juice of 1 lime
- 1 tbsp toasted sesame seeds to garnish
Sauce ingredients:
- 1/3 cup peanut butter
- ½ cup water
- 2 tbsp tamari
- 1 ½ tbsp fish sauce
- 1 tbsp fresh ginger finely grated
- 2 tsp cornflour
- 2 tsp coconut sugar
- 1 red chilli finely chopped
- 2 cloves garlic finely chopped

STIR FRY VEGETABLES WITH PEANUT SAUCE AND RICE NOODLES
Method
Prepare the Ingredients:
- Mix the sauce ingredients together and set aside.
- Peel and julienne the carrot.
- Finely slice the red onion.
- Roughly chop the stir-fry greens.
Cook the Noodles:
- Cook the rice noodles in boiling water according to the instructions on the packet. Drain and set aside.
Stir-Fry:
- Heat a pan on high heat and add a drizzle of olive oil.
- Add the carrot and onion, cooking for a couple of minutes.
- Add the stir-fry greens and cook for another minute.
- Add the peanut sauce and cooked noodles to the pan.
- Stir everything together until well combined.
- Squeeze over the lime juice and check the seasoning. Add a pinch of salt if needed.
- Sprinkle with toasted sesame seeds and serve immediately.
