Ingredients
Serves 4 as a starter
- 1 head of smoked garlic, squeezed out of the skin
- A small onion, peeled and quartered
- 1-2 fresh chilies
- 2Tbsp smoked paprika
- ½ tsp cayenne pepper
- 2Tbsp tomato paste, puree or ketchup
- 1Tbsp vinegar, ideally cider
- ¼ cup honey, melted
- ¼ cup rice bran or other neutral oil
- 1kg ribs, cut in to 3 inch lengths

Method
- Preheat oven to bake 125°C
- Make your sauce by combining everything in a small blender and processing until smooth – check seasoning
- Toss ribs to coat in a baking pan, and cover with foil
- Bake uninterrupted for 2 hours, then stir once, before baking for a further hour
- Serve or store for reheating in a moderate oven for 15-20min
- Also great cold for a picnic!
