Ingredients

Base:

  • 1.5 cup flour
  • ½ cup icing sugar
  • 125gm butter

 

Filling:

  • 500 gm pumpkin – cooked, mashed & cooled
  • 2 eggs
  • ½ cup brown sugar
  • 1/3 cup cream
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger

 

Topping:

  • ½ cup rolled oats
  • ½ cup coconut
  • ¼ cup brown sugar
  • ¼ cup flour
  • 40gm butter melted

Method

Base:

  • Add ingredients to food processer and blitz until fine crumb form and starts to come together
  • Press into the base of slice pan
  • Bake at 160 degrees C for approximately 10 mins or until it starts to brown

 

Topping:

  • Add all ingredients to food processer, blitz until it forms a crumble. Press some of it together to form some larger chunks

 

Filling: 

  • Beat eggs & sugar together. Add the rest of the ingredients and mix well until smooth and combined
  • Pour over the cooked base
  • Sprinkle topping over the filling, and bake for approximately 20 mins or until cooked
