Ingredients

  • Strawberry Ingredients:
  • 200g strawberries
  • 2 tbsp coconut sugar
  • Juice and zest of 1 orange
  • Coconut Cream Ingredients:
  • 1 can of coconut cream (chilled for a couple of hours) or regular Cream
  • Zest and juice of 1 orange
  • 1 tbsp maple syrup (optional)
  • Hazelnut Pancake Ingredients:
  • 1 cup hazelnuts (finely ground)
  • ¾ cup coconut milk or milk
  • 2 tbsp coconut oil or oil
  • 2 tbsp maple syrup
  • 2 eggs (Agreeable Nature)
  • ¾ cup rice flour
  • 1 ½ tsp baking powder

Hazelnut Pancakes with Macerated Strawberries and Whipped Coconut Cream

Method

  • To make the macerated strawberries, wash and slice the strawberries and add to a bowl
  • Sprinkle over the sugar
  • Stir through the orange juice and set aside
  • Make the whipped coconut cream by carefully scooping the solid coconut cream out of the can (keep the coconut water for later use, ie in smoothies) and placing in a bowl
  • Whisk in the orange zest and juice and the maple syrup if using
  • Whisk until it is thick
  • Melt the coconut oil and add the egg and coconut milk
  • Whisk until combined before adding the remaining ingredients
  • Warm a pan on a low heat
  • Add a small amount of oil to the pan and then ladle in some of the pancake mix
  • Cook the pancake until bubbles form on the surface
  • Turn the pancake over carefully and continue to cook the other side for a few minutes
  • Repeat this process until all of the pancakes are cooked
  • Once all of the pancakes are cooked serve with the macerated strawberries and whipped coconut cream!
