Ingredients
- Strawberry Ingredients:
- 200g strawberries
- 2 tbsp coconut sugar
- Juice and zest of 1 orange
- Coconut Cream Ingredients:
- 1 can of coconut cream (chilled for a couple of hours) or regular Cream
- Zest and juice of 1 orange
- 1 tbsp maple syrup (optional)
- Hazelnut Pancake Ingredients:
- 1 cup hazelnuts (finely ground)
- ¾ cup coconut milk or milk
- 2 tbsp coconut oil or oil
- 2 tbsp maple syrup
- 2 eggs (Agreeable Nature)
- ¾ cup rice flour
- 1 ½ tsp baking powder

Hazelnut Pancakes with Macerated Strawberries and Whipped Coconut Cream
Method
- To make the macerated strawberries, wash and slice the strawberries and add to a bowl
- Sprinkle over the sugar
- Stir through the orange juice and set aside
- Make the whipped coconut cream by carefully scooping the solid coconut cream out of the can (keep the coconut water for later use, ie in smoothies) and placing in a bowl
- Whisk in the orange zest and juice and the maple syrup if using
- Whisk until it is thick
- Melt the coconut oil and add the egg and coconut milk
- Whisk until combined before adding the remaining ingredients
- Warm a pan on a low heat
- Add a small amount of oil to the pan and then ladle in some of the pancake mix
- Cook the pancake until bubbles form on the surface
- Turn the pancake over carefully and continue to cook the other side for a few minutes
- Repeat this process until all of the pancakes are cooked
- Once all of the pancakes are cooked serve with the macerated strawberries and whipped coconut cream!
