Ingredients
- 4-5 peaches
- 2 fresh corn cobs
- ½ cucumber
- ½ capsicum
- ½ fresh chilli (optional)
- Handful basil leaves
- ½ lemon (juiced)
- Pinch sea salt
- Large handful spinach leaves
Peach & Basil Salsa Salad
Method
- Beat together butter & honey together for 2 mins until light
- Slice corn kernels off cobs, shred & chop spinach leaves, finely chop chilli & basil, dice all other vegetables
- Add everything to a large bowl and toss with lemon juice and salt to taste
